As more and more students choose to follow plant-based and vegan dietary plans, there's a growing demand for nutritious dining options that accommodate these students' needs all across the country, but also here in Worcester. In a recent Telegram & Gazette article, Holy Cross Dining was recognized for the variety of changes to the offerings in Kimball, the College's main dining hall, in response to this increasingly popular trend.
Some of these accommodations include an all-vegan station called “Lean and Green” and a vegan nutrition guide created by Alyssa Pittman, Holy Cross' own registered dietitian and assistant director of nutrition.
The College's Dining Services team takes a very personalized approach in working with students to expand their dietary options and provide the necessary nutrition for students to succeed. "It's wonderful to build relationships with the students because they are very open about what it is that they’re looking for," said Linda Nardella, the director of dining services.
Sophia Lima, a senior who decided to adopt a vegan lifestyle during her sophomore year, told the Telegram that since she made the choice to eat only vegan-friendly options, "eating vegan has become second nature," with the guidance and resources available at Holy Cross.
